One of our favorite things about raising quail is discovering new and creative ways to enjoy their delicate, flavorful eggs. Recently, we came across a recipe from A Life Delicious for Baked Quail Egg Bites, and it quickly became a household hit at Flag Rock Quail.
We decided to try it on a quiet evening with friends β a simple gathering that turned into one of those unexpectedly perfect nights. The smell of crisp bacon and warm pastry filled the kitchen, and as the little phyllo cups came out of the oven, golden and bubbling, we knew this was going to be something special.

Ingredients
15 quail eggs (we, of course, used our own from Flag Rock Quail π¦)
1 box Athens Mini Phyllo Shells (15 count)
1β2 pieces bacon, cooked and roughly broken up
2 scallions or chives, diced
Optional: grated cheese (sharp cheddar or vegan cheese)
Salt and pepper, to taste
Himalayan pink salt, optional for extra flavor
Instructions
Preheat the oven to 350Β°F (175Β°C) and place the mini phyllo shells into a mini muffin pan to keep them steady.
Add bacon and cheese: Divide the cooked bacon evenly among the shells and sprinkle a touch of cheese on top.
Add quail eggs: Using a serrated knife, gently cut the top off each quail egg and pour it into a shell. (Cracking them like chicken eggs doesnβt work well β the shells are too delicate!)
Season and bake: Sprinkle with salt and pepper, then bake for 10β13 minutes until the whites are set and the yolks are slightly thickened.
Garnish and serve: Top with scallions or chives and enjoy while warm.
